<u>Blueberry Filling:</u><br />
<br />
4 cups blue berries (fresh berries are best, but frozen will work too)<br />
1/4 cups water<br />
Combine berries and water in saucepan. Cook over medium heat until hot but not boiling.<br />
<br />
1 1/2 cups sugar<br />
1/4 cup cornstarch<br />
Combine sugar and cornstarch (be sure to mix well), stir into hot berry mixture, bring to boil, and cook until thick.<br />
<br />
1 T lemon juice<br />
1 T butter<br />
(Add if desired...but it will still be delicious if your don't)<br />

1 cup flour<br />
2 teaspoons sugar<br />
1/4 teaspoon salt<br />
6 Tablespoons unsalted butter cold and cut into small pieces.<br />
Combine flour, sugar, and salt, use pastry blender to cut in butter.<br />
<br />
1/4 cup sour cream<br />
Add sour cream and use pastry blender. Blend until dough begins to clump together, remove from bowl and shape into ball.<br />
Refrigerate for at least 30 minutes (okay folks...sometimes I'm in a rush and skip this step) .<br />
Remove from refrigerator and transfer to lightly flowered surface. Allow the dough to sit for 5 minutes before rolling out.<br />
<br />
I don't have a special cutter for making the hand pie crust. For the hand pies in this post, I rolled out the dough, placed a 4 1/2 by 4 1/2 inch plastic lid on the dough and cut around it. Once the dough is cut add 1 1/2 - 2 Tablespoons of cooled blueberry filling to the crust, fold over, and crimp edges with a fork.<br />
<br />
Place hand pies on baking sheet (line baking sheet with parchment paper to help with clean up). Add potatoes and cabbage. Cook for about 7 minutes. Add beef and cook until no longer pink. Stir in tomato paste, Worcestershire sauce, thyme and 1-cup water. Cover and cook until potatoes are tender, about 15 minutes. Lightly mash mixture with fork. Add salt and pepper. Let cool.<br /><br />Roll half of crust into a square (about 14 inches). Cut into 4 equal squares place ½C filling on one half of each square. Brush edges with water fold over and crimp with fork to seal. I don't know about you, but things have been a little crazy around here. Halloween is fun, but it makes for an oh, so crazy week!! Once upon a time I did, but I've decided it's just easier and usually less expensive to buy them. Now don't mistake this to mean I purchase ready made costumes. Oh, no that takes all of the fun out of the event. We use clothes in the closet, or buy them at an inexpensive price, and put them together to create fun costumes. Add next 5 ingredients to sausage mixture bring to boil. We usually use the recipe on the back of the pumpkin can, but I was out of condensed milk. I was sure that Martha Stewart would never use something as commercial as condensed milk so I pulled out one of her cook books, and sure enough I found what I was looking for. The recipe we used called for heavy cream (I know I shouldn't keep things that fattening on hand, but you never know when you might need it.). I failed to read the recipe well, before I started and had to substitute an ingredient, but they still turned out yummy!! The recipe was in an old Martha Stewart Magazine, but you can find it <a href="http://www.marthastewart.com/recipe/pumpkin-cookies-with-brown-butter-icing?autonomy_kw=pumpkin%20cookies%20with%20brown%20butter%20icing&rsc=header_1">here</a>. I substituted sourcream for the condensed milk, and used cream cheese icing rather than the suggested "brown butter icing". The recipe also says to use a pastry bag and pipe them onto the cookie sheet, I just used a spoon. They're easy to make and are soft and delicious. The cucumbers soaked in it, and when I drained off the lime they were so crisp. Soak over night.</p><p>Next day pour into pan and boil for 15 minutes.</p><p>Pack in jars and seal.</p><p>Fancy that, I'm in a real pickle for time with a new blog and pickles too. Oh, My!!!I don't have long for a post today, but I just had to share these YUMMY, YUMMY bars. They are fantastic, not like "oh, those are good" it's more like "OH MY GOODNESS, THOSE ARE GREAT"!!! The best part is they are so super easy, you can make them in a flash, no baking, just chill for an hour (I placed mine in the freezer for 15-30 min, and that worked fine).
